You start with boiling a 1/2 lb of shrimp until they turn pink this usually takes 3 to 4 minutes. Halve the shrimp and place them in a mixing bowl , add 2 large chopped plum tomatoes, 1 cup black beans (drained), 1/2 of a ripe mango chopped and 1/3 red onion that has been finely chopped. then pour in to this wonderful diabetic receipes a 1/2 cup fresh squeezed orange juice along with a tablespoon of lime juice. You will want to season this diabetic receipes to taste with salt and pepper. Now take 4 large lettuce leaves and place on 4 plates , then place the shrimp mixture divided into quarters on top of the lettuce.
